Thyme and Swiss Cheese Mini-Quiches

Location: The Stephen Williams House, Savannah, GA

Ingredients

  • 3 eggs

  • 1 cup heavy cream

  • 1/2 tsp. salt

  • 1/4 tsp. ground pepper

  • Pinch of nutmeg 

  • 1 TBSP fresh thyme, chopped

  • 1 1/2 cup swiss cheese, shredded

  • 1/4 cup grated Parmesan cheese

  • 1 TBSP olive oil

  • 1 bunch fresh spinach

  • 2 refrigerated or homemade pie crusts

Directions

  1. Preheat oven to 375°F.

  2. Roll out pie crusts slightly and cut out circles big enough to fit inside a muffin tin and go partway up sides (a wide-mouth Mason jar lid works well as a template). Spray muffin tin with non-stick spray and push dough circles into holes.

  3. In a small pan, sauté the spinach in 1 tablespoon of olive oil. Cook until wilted. 

  4. In a large bowl, whisk eggs and pour in heavy cream. Add in salt, pepper, nutmeg, and thyme. Stir well. Fold in cheeses and spinach. 

  5. Spoon quiche mixture into muffin tin on top of crust pieces. 

  6. Bake for about 13 minutes or until egg mixture is firm and crusts are slightly brown. 

  7. Serve immediately or at room temperature. Garnish with fresh thyme.

Beet Hummus with Veggies Recipe

Ingredients

  • 1 medium sized beet

  • 1 15 oz. can white beans, such as canellini, drained 

  • Juice of one lemon

  • Salt and ground pepper, to taste

  • 2 cloves of garlic, chopped

  • 2 tsp. ground cumin

  • 1/2 cup tahini paste

  • 1/4 cup extra virgin olive oil 

  • 1/4 cup Greek yogurt

  • Sesame seeds

  • Fresh herbs, such as thyme or flat leaf parsley

  • Chopped veggies, to serve

Directions

Preheat oven to 425°F. Wash and trim beet. Rub with olive oil and wrap in aluminum foil. Roast in oven for 45-60 minutes, or until beet is tender. Cool completely and chop into chunks. 

In a food processor, combine beans, chunks of beets, lemon juice, garlic, cumin, and Tahini. Combine until smooth. Slowly drizzle in olive oil. 

To serve, swirl Greek yogurt over the top of the hummus. Top with fresh herbs, such as thyme or flat leaf parsley, and sesame seeds, and serve with fresh chopped veggies.

Lemon Almond Tea Cake Recipe

With Valentine’s Day approaching, we thought this would be a great time to share this Lemon Almond Tea Cake Recipe. Although it appeared in our Spring 2018 issue, it feels perfect for a Valentine’s (or Galentine’s!) Day treat as well, and (clearly) we can’t get enough of raspberries-themed desserts to capture that romantic vibe.

Lemon Almond Tea Cake Recipe

Recipe by Kim Daniels, adapted from Broma Bakery

Ingredients

  • 1/2 cup salted butter, room temperature

  • 3 TBSP vegetable (or canola) oil

  • 2 large eggs, room temperature

  • 1 cup granulated sugar

  •  Zest of 2 whole lemons 

  • 1 tsp. lemon extract

  • 1 tsp. vanilla extract

  • 1 1/2 cup all-purpose flour

  • 1/2 cup almond flour

  • 1 tsp. baking powder

  • 3/4 tsp. salt

  • 1 1/2 cups raspberries, halved

  • 1/2 cup slivered almonds

Directions

Preheat oven to 350°F. Butter an 8" cake pan and line with a circle of parchment paper. Set aside.

Cream butter, oil, eggs, and sugar with a stand mixer until light and fluffy, about 2 minutes. Add in lemon zest, lemon, and vanilla extracts.

Slowly add in flour, almond flour, baking powder, and salt until just combined. Fold in raspberries.

Pour batter into prepared cake pan. Top with slivered almonds. Bake for 40 minutes, or until cake is lightly brown on top and a knife inserted into the center comes out clean. Cool cake for 15 minutes before sprinkling with powdered sugar and slicing into triangles.

Winter Sangria Recipe

A cozy holiday cocktail

Ingredients

  • 1 750 ml bottle red wine

  • 1 cup orange juice

  • ¾ cup Powell & Mahoney Old Ballycastle Ginger Mixer

  • 1 cup bourbon

  • 1 orange cut into thin slices

  • 1 lemon cut into thin slices

  • 1 cup of pomegranate arils

  • club soda

Instructions

In a glass pitcher combine wine, orange juice, ginger mixer and bourbon. Add fruit and stir. Chill for at least an hour. When ready to serve, pour over ice into individual glasses and top with club soda. Garnish with additional fruit.

French Onion Soup Recipe

Ingredients

  • 2 large yellow or white onions, thinly sliced

  • 2 TBSP butter

  • 2 TBSP olive oil

  • pinch of sugar

  • 1/2 tsp salt

  • 1 cup dry white wine

  • 2 cups water

  • 32 oz vegetable broth

  • 1 clove garlic

  • cracked pepper to taste

  • 4 thick slices crusty bread, toasted

  • 4 slices Provolone cheese

  • 1 cup grated Gruyere cheese


Instructions

Heat a 5 quart Dutch oven or large heavy-bottomed saucepan over medium high heat. Combine butter and olive oil in pan. When mixture starts to shimmer, add sliced onions. Cook onions for 15 minutes, stirring often. Add sugar and salt. Turn heat to medium and continue to cook onions for about 45 more minutes or until they are caramelized. Stir them often and turn down heat if they dry out or start to burn. Onions will be soft and brown. Deglaze pan with wine. Add broth, water and garlic. Bring to a simmer and let cook for 30 minutes. 

When ready to serve, ladle soup into 4 individual ramekins or small crocks. Place one piece of toasted bread on top of each dish. Layer a slice of Provolone over each slice of bread. Sprinkle with Gruyere. Place ramekins on a baking sheet and put it in oven under a hot broiler. Broil until cheese is bubbly and starting to brown. Serve immediately. Serves 4.
